  1. The dining rooms at this three-Michelin-star restaurant are built around a century-old oak tree, which sets the tone nicely. Patrick Bouchain designed the glass-and-timber space, and the kitchen garden outside is run on permaculture principles. The Troisgros family has held this level of cooking for generations, and the current chef keeps the signature acidity sharp while nudging the vegetable work into new territory.
