Set on a rural estate southwest of Miajadas, this modern Spanish restaurant runs two tasting menus built around produce the chef hunts, forages, and pulls from the surrounding gardens himself. The cooking stays rooted in Extremaduran tradition while nudging it somewhere new, and the landscape outside is doing a lot of the heavy lifting.
