The dining room is meant to look like a forest, and it mostly succeeds: slim trunks divide the tables into little clearings, a foliage canvas covers the ceiling, and walnut wood runs underfoot and across the tabletops. This Michelin-starred fine dining room, inside a hotel in the Val-Claret resort, takes its name from the brown bear still wandering these Alps. The chef trained under Jean-François Piège and now turns mountain herbs, game, and freshwater fish into creative Alpine cooking that follows the seasons closely. The cheese trolley is entirely Alpine.
