    Vestige is a tasting menu restaurant doing something genuinely surprising on the Mississippi Gulf Coast, blending Japanese ingredients and techniques with whatever the region offers up. The room is relaxed and unpretentious, modern art on the walls and tables far enough apart that you can actually hear your date. The kind of crowd that drove an hour and doesn't mind, dressed just smart enough to feel like the meal matters.
