Villa Pignano
Tuscan
The estate outside Volterra raises its own pigs, presses its own olives, and keeps its own bees, so dinner at Villa Pignano's restaurant is essentially a tour of the surrounding 300 hectares plated up as contemporary Tuscan cooking. Lunch runs simpler; evenings get more elaborate. The wine list leans into organic Tuscany, with a fair share of bottles from the property's own vines. A long way from the nearest delivery truck.
