A two-Michelin-star creative restaurant housed in the glass-fronted modern wing of a palace that doubles as the Lower Saxony state parliament, which is either delightfully absurd or completely appropriate. The name nods to diner choice: course order, optional upgrades, wine pairings or alcohol-free alternatives. Chefs come to the table to walk through each dish, and the terrace looks out over the Leine River.
