The team pairs a modern Australian tasting menu and à la carte with the estate's own wines, which is a convenient arrangement when the wines are this good. The Swan Valley setting does a lot of the heavy lifting, and the kitchen seems content to match it rather than compete, leaning on seasonal produce and clean technique.
