A set-menu restaurant in the shadow of a 13th-century Cistercian monastery, where the kitchen is open to view and nearly everything on the plate was grown or raised within 50 kilometers. Seven "moments" make up the menu, shorter versions available, vegetarian and vegan formats negotiable. The cooking is seasonal and grounded rather than theatrical. They make their own gin, which tells you something about the level of self-sufficiency here. A Michelin Bib Gourmand.
