A charcoal fire burns outside year-round, smoke drifting across the polders of De Keignaert nature reserve, which tells you most of what you need to know about this creative tasting-menu restaurant. The brutalist concrete building is a former private residence, and the chef cooks North Sea fish and polder game with live fire and deeply personal sauces. It holds a Michelin star and ranks on the World's 50 Best list.
