Xolo is a Mexico City-inspired cocktail bar on lower Westheimer where the drinks arrive with a chemistry-class résumé: house infusions, clarified everything, a Negroni built around nixtamalized corn. There's a butter-pecan carajillo, a taco topped with caviar, and speakers custom-built for the room, which is how you know someone cared about the bass. Expect cocktail prices and good shoes.
