The old sugar mill's perforated concrete walls are what stop you first, rising against limestone karst peaks that look structurally improbable. Vector Architects turned this riverside industrial ruin into a luxury resort, and the Michelin Guide awarded it a Key. Rooms start large and escalate into lofts, townhouses, and villas. The spa occupies a former molasses tank, which is either poetic or slightly alarming depending on your mood.
