Inside the Centre Pompidou-Metz, behind walls of glass and the undulating timber canopy Shigeru Ban designed for the museum, sits one of the rare fine dining rooms actually built into a French cultural institution. The chef spent years cooking in Japan, and the menu walks Lorraine ingredients, Vosges quail, Wagyu raised locally, Meuse truffles, through Japanese technique. A Michelin star followed. The furniture is cardboard, by Ban; the cooking is not.
