Perched twenty meters up in the tower of the Centro Niemeyer, this creative tasting-menu restaurant takes its name from the Japanese word for "dream," which sets the tone. The chef's organizing idea is a kind of single-ingredient obsession, one vegetable or fish coaxed through every technique and stage of preparation until it becomes something else entirely. The views over Avilés are hard to ignore, but the cooking gives you something to think about between glances.
