Björn Frantzén's Singapore shophouse holds three Michelin stars and a tasting menu that moves you floor by floor, aperitif and amuse-bouche downstairs, the full neo-Nordic progression upstairs. The kitchen leans on seafood and Japanese ideas without quite belonging to either, and the non-alcoholic pairings are eccentric in a way that somehow makes you trust them more. Worth knowing the restaurant is temporarily closed before you plan around it.
