The line forms before the door swings open, which tells you most of what you need to know about this BBQ shop in a strip mall off 620. Pitmaster John Bates runs brisket over post oak low and slow, and the sides, particularly the smoked scalloped potatoes and poblano creamed corn, get taken just as seriously. A Michelin star, which no one saw coming from a strip mall, arrived anyway.
