    Langoustines come off the jetty directly across the road, which is about as short a supply chain as you'll find anywhere. This Michelin-starred cottage restaurant on the Waternish Peninsula seats a handful of people beside a wood-burning stove, Harris Tweed chairs included. The cooking is Scottish in its soul and French in its technique, and the cold, clear waters of Skye do most of the heavy lifting on the menu.

A Talisker dram poured over your oysters is a signature move at this seafood restaurant on the edge of Loch Harport, with the distillery sitting near enough that a tour slots neatly around a meal. The kitchen leans on whatever Skye's waters and hills are giving up, so the menu runs from fresh catch to local venison and haggis. The views across the loch do a lot of the heavy lifting before the food even arrives.
