Ground level gets genuinely busy: The Palomar's first outpost outside London, a croissant counter, a velvet cocktail bar, and a rooftop with DJs and skyline views. It sits at the hinge between Paddington, Surry Hills, and Darlinghurst, which is either convenient or dangerous.
