Two eight-seater counters in the basement of a Victorian building in central Liverpool, each with its own chef cooking and narrating the meal directly in front of you. Drinks and snacks happen upstairs first, in a dimly lit lounge that gives the whole thing a ceremonial feel. The tasting menu is ambitious and globe-spanning, the kind where the explanation is part of the dish. Andrew Sheridan brought this format up from Birmingham, and it suits the city just fine.
