Japanese
A sake brewery has occupied this site since the shogunate, and the French prix fixe restaurant inside its refurbished traditional house hasn't exactly ignored that history. The black lacquer counter and spare interior set a quiet, serious tone; the cooking leans on Yamato beef, local pickled vegetables, and Akitsuho rice, the same grain brewed next door, turned here into paella or risotto. The sake pairings come from the brewer on site. One Michelin star.
