A 12th-century abbey turned luxury wine-country hotel in the Valladolid countryside, awarded three Michelin Keys. The estate runs to 500 acres of vineyards, best seen by guided Jeep tour ending in the barrel rooms. Rooms have oak floors and French doors opening onto the vines; suites add Carrara marble tubs and wood-beamed ceilings. The spa blends wine-country ingredients with Tibetan medicine, which sounds improbable and probably works beautifully.
