    Inside the Fairmont Grand Del Mar, with arched windows framing the canyon and a glass wine cellar standing in the center of the dining room like a statement of intent, Addison is the kind of California fine dining room that makes other fine dining rooms feel like they're still figuring it out. William Bradley holds three Michelin stars and a Forbes Five Star, and his tasting menu moves from chicken liver churros to caviar-crowned rice with a confidence that is, frankly, a little disarming.
