    A timber-paneled dining room in a Swabian market town where the house classic, Zwiebelrostbraten, fried beef and onions in gravy with maultaschen and spaetzle, has apparently earned permanent residency on the menu. This is a traditional regional restaurant with a shaded inner courtyard for warmer months. The kitchen follows the seasons and nods toward wider influences, though the regulars are clearly not here for the global pivot.
