The restaurant takes its name from the northern Italian town known for truffles, and the kitchen takes that lineage seriously. Set inside the Raffles Doha beneath a vaulted ceiling, it's a formal Italian dining room where the cooking is more intricate than the clean plating lets on. Ingredients come in from Europe. A Michelin star. Book the balcony table for two if you want the full dramatic effect, or the chef's table if you'd rather watch the work.
