A chef who followed love to Castelló de la Plana and brought his whole résumé with him: Italy, France, Switzerland, Spain, all of it folded into a contemporary dining room near the center of town. The menu roams accordingly, with an à la carte side and a tasting menu of around eleven courses that needs booking ahead. It's the kind of place where the chef's biography is also the through-line of the meal.
