A small restaurant in a historic building just off the Plaza de España, where the cooking stays deliberately close to Cádiz tradition, no detours into mod-Spanish flourishes. The chef trained under Ricard Camarena and brought back a particular focus on technique, applied here to old regional recipes done with care. The menu follows the seasons and stays short. Save room for the poleá, the local dessert that tends to convert the skeptical.
