Mare is a Michelin-starred restaurant in Cádiz where the chef calls himself a stew maker and means it, running a daily-changing surprise tasting menu built around whatever came off the boats in Conil or Chiclana that morning. The cooking is rooted in traditional Andalusian home cooking, grandmother's tuna in tomato sauce very much included.
