Five generations of women have kept this inn on the Altopiano del Salto plateau running, which gives the kitchen a confidence that no restaurant group can manufacture. It's a traditional South Tyrolean trattoria, the kind where home-produced ingredients and generous portions are the whole argument. A Michelin Bib Gourmand, and you can borrow a Haflinger horse afterward, which is not something many restaurants can offer.
