Every morning the chef walks out to his Kamigamo garden and picks whatever will become dinner, which means the French restaurant he runs in Nakagyo-ku is only as fixed as the season. The counter was built by his father-in-law, a sukiya carpenter, and the mosaic inlay sits alongside Scandinavian chairs in a way that shouldn't work but does. Vegetables get pressed into vivid terrines, or coaxed into mousses and thick soups.
