Au Dos de la Cuillère
French
The lamb here comes from a farmer the chef is on first-name terms with, and it shows up on the plate in three forms. This is a warm, unpretentious country cooking spot in Verviers where the menu runs on seasonal produce from local suppliers the kitchen has known for years. Lacto-fermented touches and marinated vegetables drift in and out depending on the season. The Michelin Guide has given it a Bib Gourmand, and booking ahead is not optional.

Lamb
“The lamb, for example, comes from Harry and Martin cooks it to a perfect medium rare with a mouthwatering layer of crackling, out of which he crafts small juicy boulettes and an excellent confit flanked by crunchy seasonal veg.”
