  1. Dinner starts at six, and that punctuality tells you something about the register of this two-Michelin-star fine dining room in a small Bavarian market town. Alexander Herrmann and Tobias Bätz work as a duo, drawing almost entirely on Franconian ingredients for set menus that are precise and quietly intense. The wine list sticks exclusively to Franconian labels, which requires a certain conviction when you're cooking at this level.
