Central Texas barbecue has turned up at a fork in the road in McCalla, about as far from Austin as the name allows. It began as a food truck and now has a rustic brick building, with a menu that is basically just meat, and brisket as the main event. Weekends mean a line, and the beef ribs tend to vanish early, so the early birds win. Counter service, paper-lined trays, and the Michelin Guide lists it as a Selected Restaurant.
