    The terrace of this traditional house in İbrahimpaşa village looks out over a Cappadocian valley full of wild flowers, apricot trees, and volcanic rock formations, so booking ahead is less a suggestion than a survival skill. The team cooks from their own garden and the surrounding land, serving a single set menu of hearty, quietly refined country food on terracotta ware. A Michelin Bib Gourmand, and the wood-fired oven does most of the persuading.
