  1. Luc Kusters grows much of what he serves on the grounds around this Michelin-starred Dutch restaurant in Rembrandtpark, so the garden is basically the menu. The kitchen tracks micro-seasons with the dedication of a farmer who also happens to plate beautifully, and the two tasting menus, one plant-based, one broader Dutch, pull from local producers in ways that feel quietly radical. Light cooking, serious flavor, and a room that looks like someone actually thought about it.
