Ron Blaauw traded two Michelin stars for a gastrobar concept, which sounds like a demotion until you visit. The room is loud, colourful, and unapologetically urban, and the men's room pipes in football commentary while the women's gets jokes. The Michelin star followed anyway. The cooking is inventive without being fussy: clever combinations, good products, no ceremony about it.
