Named for the architect who designed the building, this American-style urban brasserie on the third floor looks straight across at the Olympic Stadium he also gave Amsterdam. Fire is the organizing principle in the kitchen: charcoal grill, traditional ovens, and a Surinamese-Hindustani snack on the same menu as veal sweetbreads. The cocktail bar draws a crowd. Chef Joris Bijdendijk holds a Michelin star.
