Box Tree is a formal tasting-menu restaurant where the chef grew up between Western Australia and Britain, and the menu quietly shows it, with Jarrah honey and Paddle Pop ice cream appearing alongside the kind of cooking you'd expect from a room this serious. The team pulls off warmth without dropping the white-tablecloth register.
