  1. A medieval castle above Nideggen, deep in the Eifel National Park, is an unlikely address for a polished modern French tasting menu, but here we are. The dining room is small and genuinely old, with carved woodwork sitting alongside contemporary touches in a way that shouldn't work but does. The kitchen leans on classical and Mediterranean ideas, keeping ingredients seasonal and largely regional. Four to six courses, and the staff will sort the wine.
