A small hotel built inside the walls of a 13th-century Cathar castle, with views over the medieval town of Puylaurens and the rolling hills locals compare to Tuscany. The eleven rooms mix antique character with contemporary touches, each one a little different from the last. There's a small pool, and in summer the restaurant moves to the terrace, which makes the seasonal menu feel like the obvious setting it was always meant to have.
