The entire kitchen is 18 square metres, which rules out a conventional stove or oven and leaves the chef reaching for a blowtorch and a Thermomix instead. This tiny farm-to-table spot in Terrassa does its shopping daily at the century-old market across the street, which explains why the menu skews fresh, cold, and composed. The Michelin Guide has taken notice. It's an odd, charming little place, and the constraints seem to push the cooking toward personality rather than away from it.

Coca de cristal
“We can definitely recommend the crispy La Artessana “coca de cristal” (a type of bread), with aubergine, La Frasera cream cheese and a green romesco salsa.”
