    Stone walls that predate any of the menus, an open kitchen that doubles as theater, and a queimada to kick things off: Ceibe is a tasting-menu restaurant near Ourense's cathedral that takes Galician cooking with some seriousness. The escabeches and marinades are the kitchen's signature moves, and the menus work through the region's terroir dish by dish. It holds a Michelin star.
