The research started on the Caribbean coast, documenting Indigenous recipes that were quietly disappearing, and the restaurant that grew from it now sits at number 48 on the World's 50 Best list and holds the Sustainable Restaurant Award 2025. Celele is a Colombian Caribbean dining room in Getsemaní where the menu reads like a field guide to a coast most kitchens ignore, built around native ingredients, local producers, and drinks made with Colombian fruits and fermented spirits.
