A converted barn on the Wiston Estate winery, all oak beams and brick, where the soil type itself gives the place its name. Chalk is a smart, seasonal restaurant where the short menu changes with what's growing and the obvious move is pairing it with one of the estate's own sparkling wines. The cooking is clean and unfussy, letting combinations do the work. A good place to eat well without anyone making it complicated.
