A castle outside Sommières that has burned down once and been rebuilt, which gives it a certain credibility. Château de Pondres is a ten-room boutique hotel spread between the historic keep and a contemporary annex by the pool, with nearly forty acres of parkland on all sides and a spa carved into an old stone vault. The fine-dining restaurant, La Canopée, looks out over the gardens, should you manage to leave them.
