  1. Up to eight guests share one long table pulled right up to the kitchen pass, which tells you everything about the format here. This is an intimate tasting-menu restaurant in the Austrian Tirol where a surprise menu of four to seven courses is the only option, built entirely from ingredients sourced nearby. The cooking is precise and quietly ambitious, and the front-of-house warmth makes the whole thing feel less like a performance than a dinner party.
