Perched on the upper gallery of Porto's storied Bolhão market, this is a Portuguese restaurant built almost entirely around one fish. The menu works through cod prepared every way the country has ever thought to cook it, which turns out to be quite a few ways. The desserts sneak bacalhau in too, though the pão de ló with cream cheese from the Beiras quietly ignores that theme and gets away with it.
