De Pastorie
Modern French
A 17th-century former presbytery turned polished fine dining destination, holding a Michelin star, in the quiet Flemish countryside. A father-and-son team runs the kitchen, turning out French classics with a lighter, more contemporary hand. The manicured garden and terrace do a lot of heavy lifting on a good day. The wine list runs to what is generously called a bible, which tells you roughly where the evening is headed.

Crunchy calf's sweetbread
“Crunchy calf’s sweetbread is paired with a rich, velvety potato mousseline, fried fluffy pomme dauphines, gravy, a Noilly-Prat-laced mousse and a Choron sauce – all of which explode in the mouth in a feast of phenomenal intensity.”
