A glass ceiling ribbed with wooden beams meant to suggest tree branches sits above the dining room at Demo, a contemporary restaurant tucked at the foot of Murcia's cathedral tower. The kitchen follows the market closely and leans hard into traditional Murcian flavors, so the menu shifts but the regional soul stays put. The chef is happy to talk through wine pairings, which in a town this proud of its produce is not an offer to wave off.
