A fine-dining restaurant on top of a Guatemala City tower block, which is either a contradiction or the whole point. Chef Debora Fadul runs tasting menus of eight or twelve courses built around Guatemalan producers and the country's volcanic soils, with a la carte options alongside. Corn stands in for arborio, yuca becomes gnocchi, and the name itself translates roughly as "from here." It holds a spot on Latin America's 50 Best Restaurants list.
