    The dining room is paneled floor to ceiling in dark wood, the kind that takes decades to get that warm and a little sticky. Dorfstube is the casual Swabian dining room inside Hotel Hirsch, where the menu runs to tripe, maultaschen, and roast beef buried under onions, all made from regional produce. The room is cozy in a way that isn't performed, and the service is the friendly, unhurried sort that makes a long lunch feel like the obvious choice.
