Etxebarri is a grill restaurant tucked into a Basque mountain village so quiet you'll wonder if you've made a wrong turn, but the reservation you booked months ago confirms you haven't. The chef built his own tools and a pulley system to control the flames, burning different woods for different things. It holds a Michelin star and sits at number two on the World's 50 Best Restaurants list, which the pilgrimage-length waitlist will have already suggested.
